Spring Pea Devilled Eggs

INGREDIENTS

Makes: 24 Devilled Eggs 

  • 12 large, hard-boiled eggs 
  • 1/2 cup Stahlbush Island Farms Frozen Green Peas, thawed 
  • 2 tablespoons roughly chopped cilantro 
  • 1/2 cup mayonnaise  
  • 2 tablespoons Dijon mustard 
  • Salt & pepper 
  • Crispy pancetta, for serving 
  • Chives, to garnish  
  • Smoked paprika, to garnish 
INSTRUCTIONS
  1. Slice eggs in half lengthwise & gently scoop out the yolks. Transfer yolks to a small food processor.
  2. Add the peas, cilantro, mayonnaise, Dijon, salt & pepper. Puree until smooth & season to taste with salt.
  3. Transfer mixture to a piping bag fitted with a star tip. Pipe a dollop of the filling back into each egg white. Garnish with pancetta, chives & smoked paprika. Serve immediately or store in an airtight container until ready to serve.
