1/2 cup Stahlbush Island Farms Frozen Green Peas, thawed
2 tablespoons roughly chopped cilantro
1/2 cup mayonnaise
2 tablespoons Dijon mustard
Salt & pepper
Crispy pancetta, for serving
Chives, to garnish
Smoked paprika, to garnish
INSTRUCTIONS
Slice eggs in half lengthwise & gently scoop out the yolks. Transfer yolks to a small food processor.
Add the peas, cilantro, mayonnaise, Dijon, salt & pepper. Puree until smooth & season to taste with salt.
Transfer mixture to a piping bag fitted with a star tip. Pipe a dollop of the filling back into each egg white. Garnish with pancetta, chives & smoked paprika. Serve immediately or store in an airtight container until ready to serve.
