1/2 cup Stahlbush Island Farms Green Peas, blanched
3 tablespoons soy sauce
2 tablespoons rice vinegar
2 teaspoons toasted sesame oil
1/2 teaspoon granulated sugar
Sesame seeds, to garnish
INSTRUCTIONS
In a large non-stick skillet over medium heat, add 2 tablespoons of oil & chicken. Season with salt. Once the chicken is cooked throughout, remove from the pan & set aside.
To the same skillet add the remaining oil, ginger, garlic & white parts of the scallions. Cook until fragrant, about 2 minutes.
Add the rice & cook until heated throughout. Season with salt. Create a well in the center & add the eggs. Work the rice into the egg.
Add back the chicken, carrots, peas, soy sauce, rice vinegar, sesame oil & sugar. Toss until well combined.
Transfer to a serving bowl. Garnish with the green parts of the scallion & sesame seeds.
