Classic Chicken Noodle Soup

INGREDIENTS
  • 1 Tbsp. olive oil
  • 1 lb. boneless, skinless chicken breast, cubed
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 (10oz.) package Stahlbush Island Farms Mixed Vegetables
  • 1 tsp. dried thyme
  • 1/2 tsp. paprika
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 64oz. chicken broth
  • 6oz. egg noodles (half bag), cooked according to package directions
INSTRUCTIONS
  • Add the olive oil to a large pot and allow it to heat over medium heat.
  • Once hot, add the cubed chicken and cook until browned, about 8 minutes. Set the chicken aside on a plate.
  • Then, add the onion to the pot and cook until lightly browned, about 5 minutes.
  • Add the garlic and mixed vegetables.
  • Cook for an additional 5 minutes before adding the thyme, paprika, salt, and pepper.
  • Cook for an additional 2 minutes before adding the chicken broth. Bring the mixture to a boil and then reduce the heat to simmer and cover.
  • Cook for about 15-20 minutes before adding the cooked noodles.
  • Stir and remove the soup from the heat and serve!
