These can be made both gluten-free and dairy-free!
INGREDIENTS
Ingredients:
2-3 bags Stahlbush Island Farms Frozen Strawberries
2 cups chopped rhubarb
3/4 cup brown sugar
2-3 tbsp cornstarch
2 cups (gluten free) sugar cookie dough (make your own or buy premade dough)
INSTRUCTIONS
In a pot, combine thawed strawberries, rhubarb, brown sugar, and cornstarch. Heat it up on medium, stirring sometimes, until it gets thick and syrupy (about 10-15 minutes).
Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper.
Take most of the cookie dough (¾ of it) and press it with your fingers into the bottom of the pan.
Pour the hot strawberry mixture over the pressed cookie dough crust.
Grab the rest of the cookie dough and crumble it on top of the filling.
Bake the bars at 350°F (175°C) for 40 minutes.
Let the bars cool completely before cutting into squares.
