Chocolate Mixed Berry Cobbler
INGREDIENTS
Mixed Berry Filling
2 – 10 oz bags frozen
Stahlbush Island Farms Northwest Berry Blend
1 – 10 oz bag frozen
Stahlbush Island Farms Strawberries
1/3 cup granulated sugar
3 tablespoons cornstarch
1 lemon, juiced & zested
2 teaspoons vanilla
1 pinch salt
Chocolate Cobbler Topping
1 1/2 cups all-purpose flour
3 tablespoons cocoa powder
3 tablespoons granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold & cubed
3/4 cup heavy cream
INSTRUCTIONS
Mixed Berry Filling
Preheat the oven to 375F degrees. In a large mixing bowl toss together all ingredients until well combined.
Transfer to a 9-inch deep pie dish & set aside as you prepare the filling.
Chocolate Cobbler Topping
In a separate medium mixing bowl stir together flour, cocoa powder, sugar, baking powder & salt.
Add the butter & work into the flour mixture until a crumbly mixture is formed.
Stir in the cream & mix until dough comes together. Dollop onto the fruit in large biscuit-like clumps.
Bake for 45 to 50 minutes, until the fruit is bubbly & topping is golden.
Let stand for 30 minutes at room temperature before serving.
