3 tablespoons sliced green onion, white & green parts
2 cloves of garlic, minced
1 large egg, whisked

INSTRUCTIONS
Preheat the oven to 350(f) degrees. On a small baking sheet toss the butternut squash cubes with oil, 1/2 teaspoon paprika, salt & pepper. Roast until fork tender, about 15 to 20 minutes.
Transfer the roasted squash to a mixing bowl & add the white beans. Mash together with a fork until blended.
Stir in the quinoa, bread crumbs, green onion, garlic, egg, remaining paprika, salt & pepper until well combined.
Divide mixture into 4 equal portions & shape into a burger patty. Refrigerate the burgers until firm, about 30 minutes.
Transfer burgers to a lined baking sheet & cook at 375(f) degrees until heated throughout, about 15 to 20 minutes.
When ready to serve, place the burger on a bun & top with sliced tomato, sliced red onion, lettuce & mayo.
