INGREDIENTS
1 Tbsp. olive oil
1 lb. boneless, skinless chicken breast, cubed
1 onion, diced
2 garlic cloves, minced
1 (10oz.) package
Stahlbush Island Farms Mixed Vegetables
1 tsp. dried thyme
1/2 tsp. paprika
1 tsp. salt
1/2 tsp. pepper
64oz. chicken broth
6oz. egg noodles (half bag), cooked according to package directions
INSTRUCTIONS
Add the olive oil to a large pot and allow it to heat over medium heat.
Once hot, add the cubed chicken and cook until browned, about 8 minutes. Set the chicken aside on a plate.
Then, add the onion to the pot and cook until lightly browned, about 5 minutes.
Add the garlic and mixed vegetables.
Cook for an additional 5 minutes before adding the thyme, paprika, salt, and pepper.
Cook for an additional 2 minutes before adding the chicken broth. Bring the mixture to a boil and then reduce the heat to simmer and cover.
Cook for about 15-20 minutes before adding the cooked noodles.
Stir and remove the soup from the heat and serve!
