When it comes to holiday picnicking, you can talk about so many different kinds of food! Barbecue, casseroles, side dishes, ice cream…all good things. But dessert is our favorite, and when it comes to the first long weekend of the summer season and the official kick-off of summer, you have to talk about strawberry desserts! Strawberries are the first berry ready for picking, even in colder areas like the Pacific Northwest, so they really are the first sign of summer for many folks. And we have 5 perfect recipes to help you celebrate.

Strawberry Galette

If you’ve never made a galette, it may just become your favorite dessert ever. It’s basically a dessert pizza, which means it’s really easy to make and there’s no real baking involved. You can even buy a pre-made crust! It’s perfect for making in advance, and if you need to transport it, you can cut it up into smaller pieces. It’s also high customizable, giving your guests the option to add toppings like whipped cream, chocolate or other items if they want to.

Roasting works well with fresh or frozen berries, although with frozen berries you will get more juice.

Roasted Strawberry Popscicles

Speaking of roasting berries, you have to try these Roasted Strawberry Popsicles! You get the gorgeous color by blending the roasted berry puree with a little yogurt, and then a little more for an ombre effect. It doesn’t take much time, as the mixture only has to set up slightly to be able to proceed with the next layer. You can use these silicone popsicle molds for freezing them, which release easily and come with the sticks so you always have everything you need to make popsicles. These molds are also great for freezing smoothie mixtures into popsicle shapes for a fun summer breakfast treat for kids that’s also healthy.

Puff pastry desserts are TRENDING right now! They are so easy and cute. This Strawberry Turnover recipe can totally be made into an insta-worthy dessert! Just put the filling in the middle of your pan on some parchment paper and lay the puff square on top–done! Personally, we like the portability of the turnover/hand pie shape, but do what makes you happy. This recipe also features a delightfully light vanilla glaze that’s easy to make as it is delicious.
